Ingredients for 4 servings:
- 1 m.-large pepper
- 1 m.-large zucchini
- 300 g cocktail tomatoes
- 200 g feta cheese
- 2 cloves garlic
- 2 tsp green pesto
- 1 tbsp balsamic vinegar, white
- salt and pepper
- olive oil
- 500g penne
- n. B. Olives, optional
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
vegetarian, healthy and delicious
Chop the bell peppers and zucchini and sauté them with the whole tomatoes in olive oil. Season with salt and pepper. Cook the pasta in plenty of salted water until al dente. Turn off the heat with the vegetable pan, finely chop the garlic, and sauté it in the remaining heat. Chop the feta, drain the pasta, and add both to the vegetable mixture. Now just add the balsamic vinegar and pesto. Mix everything well. If you like, you can also add olives from the jar.
