Pasta with arugula, olives and tomatoes

Ingredients for 2 servings:

  • 250g pasta
  • 1 handful of arugula
  • 2 tomatoes, fresh
  • 1 mozzarella
  • some tomatoes, dried
  • some olives
  • 2 garlic cloves
  • olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta in salted water until al dente. Chop the sun-dried tomatoes, olives, arugula, mozzarella, and garlic into small pieces and place in a bowl. Deseed and chop the fresh tomatoes, too, and add to the bowl. Mix everything with the olive oil, add the hot pasta, mix well, and season with salt and pepper. It’s especially delicious in summer, as it’s a semi-warm dish. It’s also delicious eaten cold as a salad.
