Sauerkraut and potato pancakes

Ingredients for 3 servings:

  • 700 g potatoes, waxy
  • 300 g sauerkraut
  • 1 egg(s)
  • 1 tbsp, leveled cornstarch
  • 1 tbsp low-fat curd cheese
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the potatoes and coarsely grate them. Squeeze the sauerkraut and roughly chop it. Mix all ingredients together and season with salt and pepper. Fry the fritters in hot oil. They also taste delicious with some spring onions (without the green parts) or diced bacon.
