Ingredients for 1 servings:

  • 500 g quark, can also be low-fat
  • 250 g yogurt, Greek
  • ½ cucumber(s)
  • 1 garlic, Chinese, about 4-8 normal cloves
  • 3 tbsp olive oil
  • 1 tbsp white vinegar
  • 1 tsp honey
  • salt and pepper

Working time approx. 15 minutes; Rest time approx. 5 minutes; Total time approx. 20 minutes

the slightly different variant

Peel and finely grate the cucumber. Sprinkle some salt over the grated cucumber and let it stand. Meanwhile, finely chop the garlic (do not press). After a while (about 5 minutes), squeeze the cucumber with your hand and carefully drain the water. Then add the remaining ingredients and mix well. Let stand for about 15 minutes and season again with salt and pepper. Tips: Alternatively, you can use lemon instead of vinegar. If you want a “special” flavor, I recommend adding a teaspoon of Madagascar peppercorn (grind it finely first, of course). This gives the whole thing an even more special touch. This is the recipe that (in my opinion) has proven to be the best.
