Quark croissants with jam filling

Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 600 g flour
  • 500 g margarine
  • 200 g sugar
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • ½ jar jam or plum jam
  • ½ package of powdered sugar
  • little water
  • Flour , for the work surface

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

according to my great-grandmother’s recipe

Place the flour and sugar in a large bowl. Add the quark and margarine. Knead together with the baking powder, vanilla sugar, and salt. Knead and add more flour until the dough no longer sticks to your fingers. Dust the work surface with flour. Divide the dough into 9 roughly equal-sized balls. Roll out the first ball on the floured surface to about 2 mm thick and cut it into eighths using a kitchen knife. Place half a teaspoon of jam on the wide end of the pieces and roll up like a croissant towards the thin end. Press the ends together firmly and place on a baking sheet. Continue until all the dough is used up. Bake the croissants for 20-25 minutes in a preheated oven at 180°C/fan. Mix the icing sugar with a little water. Cover the still-warm croissants with icing. Makes about 72 croissants. The quark croissants are also great for freezing.
