Sweet potato chicken pan

Ingredients for 4 servings:

  • 1 sweet potato(s)
  • 4 potatoes
  • 400 g chicken breast
  • 150 ml vegetable stock
  • 200 ml cream
  • 2 bell peppers
  • 2 carrots
  • 1 onion(s)
  • salt and pepper
  • Paprika powder
  • nutmeg
  • possibly butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel and dice the sweet potatoes and potatoes. Place them in a pot of salted water and boil for 10 minutes. Cut the chicken breast into small pieces, sear briefly, and remove from the pan. Cut the vegetables into small pieces and sear in the pan (preferably with a generous knob of butter). Deglaze with the vegetable stock. Once the vegetable stock has evaporated, add the potatoes and chicken to the pan, add the cream, and season. Let the cream reduce briefly, and you’re done.
