Ingredients for 2 servings:
- 2 chicken breast fillets
- 2 chicken legs
- pepper
- 1 jar of mango chutney, mild, approx. 230 g
- 3 tbsp soy sauce, dark
- 6 tbsp peanut oil
- 1 tsp, leveled coriander powder
Instructions
Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 25 minutes; Total time approx. 12 hours 40 minutes
Rinse the chicken pieces, pat dry, and cut each fillet into three pieces. Split the legs at the joint. Mix the marinade ingredients well and place in a bowl (or freezer bag). Pepper the chicken pieces on both sides and refrigerate in the marinade overnight (at least 12 hours). Then cook the chicken fillets in a preheated oven at 220°C (convection oven) for about 25 minutes (turning after 20 minutes). The surface will become very dark due to the marinade.
