Ingredients for 1 servings:

  • 500 g spelt flour
  • 150 g crème fraîche
  • 75 g coconut blossom sugar, alternatively honey
  • 250 g butter
  • 1 egg white
  • Flour for the work surface
  • 25 g crème fraîche
  • 1 egg yolk
  • 1 handful of nuts or almond flakes

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 34 minutes

Christmas cookies with spelt flour and coconut blossom sugar

Preheat the oven to 180°C (top/bottom heat). Combine all the dough ingredients in a mixing bowl and mix with a mixer (dough hook), first on the lowest speed, then on the highest speed, until you have a smooth dough. Roll out the dough in portions on a lightly floured surface to about ½ cm thick. Then cut out cookies and place them on a prepared baking sheet. Whisk together the crème fraîche and egg yolk. Gradually spread the mixture over the cookies. Decorate the cookies with nuts or flaked almonds. Bake in the preheated oven for about 14 minutes. Tips: You can use sour cream instead of crème fraîche. If you want to refine the flavor, simply add coconut flakes or ground nuts (about 50-100 g) to the dough.
