Hazelnut cookies

Ingredients for 1 servings:

  • 100 g sugar
  • 2 eggs
  • 100 g flour, non-stick
  • 10 g almond(s), chopped
  • 150 g hazelnuts, ground
  • 1 tbsp gingerbread spice
  • Hazelnuts, whole for topping

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat the sugar with the two eggs in a bowl until fluffy. Mix the flour with the chopped almonds, ground hazelnuts, and gingerbread spice, and quickly knead into a smooth dough with the sugar and egg mixture. Roll out the cookie dough to a thickness of about 4-5 mm. Cut out cookies using any shape you like (stars, Christmas trees, squares, circles [e.g., with an upturned shot glass], etc.) and place them on a baking sheet lined with baking paper. Lightly press a whole hazelnut into the center of each cookie. Bake in a preheated oven (center of the oven) at 190°C (= gas mark 3-4) for about 15 minutes.
