Ingredients for 1 servings:

  • 6 eggs
  • 400 g sugar
  • 200 g hazelnuts, ground
  • 800 g ground almonds
  • 100 g candied lemon
  • 100 g candied orange peel
  • 2 tsp cinnamon powder
  • 1 tsp clove powder
  • 1 lemon(s), untreated, zest
  • 1 pinch of ammonium bicarbonate
  • 1 pack of wafers

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Preheat the oven to 200°C. Beat the eggs with a hand mixer, then beat with the sugar until frothy. Now add all the remaining ingredients and mix well. Spread the batter about one centimeter high on the wafers. Bake for about 15 minutes. The gingerbread cookies are delicious on their own, with icing, or with chocolate coating. Tip: If the gingerbread mixture is too runny, you can thicken it with a little grated rusk. The gingerbread cookies taste delicious warm, but only develop their full flavor after 8 days in a tin.
