Small hazelnut gingerbread

Ingredients for 1 servings:

  • 4 eggs
  • 300 g sugar
  • 1 packet of vanilla sugar
  • 280 g hazelnuts, ground
  • 1 lemon(s) (zest for the dough, juice for the icing
  • 1 tsp gingerbread spice
  • ½ tsp baking powder
  • 100 g flour
  • powdered sugar
  • Hazelnuts, whole as needed

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Beat the eggs with sugar and vanilla sugar until frothy, then gradually add the hazelnuts, lemon zest, and gingerbread spice. Finally, stir in the flour mixed with the baking powder. Using a teaspoon, place small heaps of the mixture onto wafers (approx. 5 cm in diameter) and bake in an oven preheated to 175 degrees Celsius (350 degrees Fahrenheit) for about 15 minutes. Cover with a thick glaze made from powdered sugar and lemon juice. Press a hazelnut into the still-moistened glaze for decoration.
