Ingredients for 1 servings:

  • 220 g flour
  • 110 g butter
  • 2 egg yolks
  • 60 g sugar
  • 1 tbsp rum
  • 1 pinch of salt
  • 100 g jam (currant)
  • 250 g marzipan – raw mass
  • 150 g powdered sugar
  • 150 g cake icing, chocolate
  • 100 g walnuts, halved

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Make a shortcrust pastry from flour, butter, sugar, egg yolk, rum, and salt. Quickly knead all the ingredients together. Let the dough rest in the refrigerator for about 30 minutes. Roll out to a thickness of about 2 mm and cut out small round cookies. Place these on a baking tray lined with baking paper. Let rest for about 35 minutes. Bake in a convection oven at 190 degrees Celsius for about 35 minutes. Let the finished pastry cool on a wire rack. While it’s baking, knead the marzipan with the powdered sugar and roll it out. Cut out the same number of even-sized, round marzipan pieces as you did with the shortcrust pastry. Top the shortcrust pastry cookies with jam and a piece of marzipan each. Finally, cover with chocolate glaze. Garnish each with half a walnut.
