Ingredients for 4 servings:

  • 900 ml water
  • 200 g desiccated coconut
  • 6 sheets of gelatin, soaked
  • 30 g ginger, finely weighed
  • ¼ tsp vanilla (bourbon)
  • 100 g banana(s)
  • 1 pinch of salt
  • possibly sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

gluten-free, egg-free, dairy-free

Boil the desiccated coconut in water for about 10 minutes. Then blend in a blender with ginger, vanilla, and salt on medium speed for about 20 minutes. Add the squeezed gelatin and dissolve. Blend for another 5 minutes. Add the banana and blend again. Season to taste and add sugar, if desired. Pour into rinsed cups or dessert bowls and chill overnight.
