Ingredients for 1 servings:
- 175 g dark chocolate
- 125 g butter, soft
- 150 g brown cane sugar
- 1 bag of vanilla sugar
- 1 pinch of salt
- 2 eggs
- 3 tbsp rum
- 120 g flour
- 150 g hazelnuts, chopped
- 250 g chocolate glaze (hazelnut)
- 100 g hazelnuts, sliced
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 45 minutes
Similar to pralines – sounds complicated, but it isn’t. Makes about 60 pieces.
Break the dark chocolate bar into small pieces, melt it in a double boiler, and let it cool slightly. Meanwhile, beat the softened butter with a mixer until fluffy. Weigh the brown sugar and mix it with the vanilla sugar and salt. Mix it with the butter and eggs until creamy. Stir in the melted chocolate and rum. Then add the flour and finally the chopped hazelnuts. Lightly grease a baking tray (so the paper doesn’t slip) and line it with baking paper, leaving a small raised edge on all sides. Now spread the thick batter evenly over the tray, about a finger’s thickness thick. Bake in the preheated oven for 15 minutes. Electric oven 170°C, fan oven 160°C. Remove the tray from the oven and let it cool for at least two hours. I always let it stand overnight. Then place a second sheet of baking paper on top of the cake, place a second baking tray upside down, and turn the trays over. This leaves the smooth surface at the bottom, allowing you to carefully peel off the first layer of baking paper. Melt the hazelnut glaze in the microwave or in a water bath and quickly spread it over the dough sheet. Immediately sprinkle the sliced hazelnuts over it, pressing down lightly if necessary. Now you can remove the dough sheet from the baking sheet and cut it into small diamonds or squares using a knife or pizza cutter.
