Exotic dessert with lemongrass

Ingredients for 5 servings:

  • 500 ml milk (fresh milk)
  • 2 packets of pudding powder (vanilla)
  • 1 packet of vanilla sugar
  • 500 ml coconut milk, from the can
  • 2 tbsp sweetener
  • 6 lemongrass, fresh
  • possibly fruits
  • whipped cream
  • Mint or flowers

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Peel the lemongrass and slice it lengthwise. Mix the fresh milk and coconut milk and heat. Reserve a small amount of the milk in a separate cup and dissolve the pudding mix in it. Bring the lemongrass to a boil in the milk mixture and simmer gently for about 15 minutes, adding some grated lemongrass if desired. Then strain the lemongrass through a sieve and set aside. Add the pudding mix, sweetener, and vanilla sugar to the flavored milk (you can also use sugar, of course). Bring everything back to a boil briefly. Then pour the mixture into 5 cooled, previously rinsed molds or bowls. If you like, you can also pour fruit into the mixture. Get creative. Refrigerate the bowls for an hour and then decorate with the remaining lemongrass, whipped cream, and mint leaves or flowers.
