Spring soup with meatballs

Ingredients for 8 servings:

  • 6 large potatoes, medium diced
  • 1 kg cauliflower and broccoli mix (frozen)
  • 1 kg peas and carrot mix (frozen)
  • 500 g minced meat, mixed
  • 250 g ham, diced
  • 3 tbsp vegetable broth
  • 1 tbsp salt
  • 1 tbsp mixed herbs (frozen)
  • Paprika powder
  • Spice mix (minced meat spice)
  • Salt
  • 1 m.-sized egg(s)
  • 2 tbsp breadcrumbs
  • e.g. water, hot

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel, wash, and dice the potatoes. Place them in a large pot, add the vegetables, diced ham, herbs, and vegetable stock. Fill with hot water so that the water is at least 1 cm above the vegetables. Add a little salt. Place the ground beef in a bowl, add the paprika, meatball seasoning, egg, and breadcrumbs, and mix everything together. Form into small balls. When the soup starts to boil, add the balls. Simmer the soup for 20-25 minutes, adjusting the seasoning if necessary.
