Ingredients for 4 servings:

  • 400 g minced meat, mixed
  • 300 g potatoes
  • 300 g carrot(s)
  • 1 m.-sized egg(s)
  • 3 tbsp breadcrumbs
  • 1 ½ liters of water
  • 2 tbsp vegetable broth, instant
  • salt and pepper
  • chili flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

First, bring a pot of water with about 1.5 liters to a boil, bring it to a boil, and stir in 2-3 tablespoons of vegetable stock. Peel the potatoes and carrots and chop them up pretty finely (as in the picture), then add them to the stock. Now mix the minced meat with an egg and the breadcrumbs, season lightly, and form into small meatballs. These then go into the stock. Now let the whole thing simmer for 25-30 minutes until everything is cooked. Finally, season to taste. Since I always like my soup nice and spicy, I season it with salt, pepper, and chili flakes. If you want to save calories, you can swap the potatoes for kohlrabi; it tastes delicious too!
