Ingredients for 6 servings:
- 1,000 g sausage (hunting sausage)
- 1,000 g tomatoes, pureed
- 1 large onion(s)
- 2 tbsp tomato paste
- 1 dash of tomato ketchup
- 1 tbsp cream, or Cremefine
- Chili powder or flakes
- some basil, fresh
- some parsley
- 1 pinch(s) of pepper
- 1 pinch of salt
- 750 g pasta (preferably spirali)
- Fat, for frying
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Hunting sausage cubes in tomato sauce
First, chop the onion into small pieces and dice the sausage. Then, sauté the onion pieces in a pan, then add the sausage cubes and fry thoroughly. Season with pepper and salt, add the 2 tablespoons of tomato paste, and mix everything together. Don’t let it sit for too long, or it might become bitter. Deglaze everything with the passata and stir well. A dash of ketchup rounds off the flavor and sweetens it a little. Add the cream or crème fraîche, stir, and simmer. Chop the basil and parsley, add them to the sauce, and season again with pepper, salt, and chili powder. Bring back to a boil briefly. In the meantime, cook the pasta as usual and serve everything together.
