Tomato noodle soup with zucchini

Ingredients for 4 servings:

  • 1 onion(s), finely chopped
  • some oil for frying
  • 100 g bacon, cut into small cubes
  • 1 pack of tomatoes, chopped (500 g) or fresh
  • 750 ml vegetable stock
  • 150 g pasta, small (e.g. spaghetti, small croissants, shells,…)
  • 1 zucchini
  • 1 clove(s) garlic, finely chopped
  • 1 tbsp honey
  • salt and pepper
  • possibly chili powder
  • some basil, chopped

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

made quick and easy

Sauté the finely chopped onion in a little oil. Add the diced bacon and cook briefly. Add the tomato chunks and vegetable stock. Cut the zucchini into approximately 1 cm cubes and mix with the pasta. Season to taste with garlic, honey, salt, pepper, and chili powder, if desired, and simmer for about 10 minutes, stirring occasionally. Finally, stir in the chopped basil. Divide among plates and serve with baguette, if desired.
