Vegetable meatballs à la Gabi

Ingredients for 4 servings:

  • 100 g oat flakes, fine, roasted without fat in a pan while stirring
  • 60 g corn (can), drained
  • 1 bell pepper(s), red, pitted, very finely diced
  • 2 bunch chives, very finely chopped
  • 200 g low-fat curd cheese
  • 4 m.-sized eggs
  • 100 g Greek sheep cheese, crumbled
  • 1 tbsp mustard, medium hot
  • Sea salt and black pepper, freshly ground
  • Nutmeg, freshly grated
  • 2 tbsp rapeseed oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Combine oat flakes, sweetcorn, paprika, chives, quark, eggs, feta cheese, and mustard, season with salt, pepper, and nutmeg, and form the mixture into meatballs. Heat the oil in a pan and fry the meatballs for about 10 minutes on each side until browned. The meatballs are delicious hot or cold.
