Ingredients for 2 servings:

  • 4 flour tortillas
  • 1 cup beefsteak tomatoes (oxheart tomatoes), diced
  • Hummus
  • leaf lettuce
  • Harissa
  • 1 lemon(s), pickled
  • 2 slices of cheese (grilled cheese)
  • 1 onion(s), red
  • 2 eggs

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Wraps Donato are dreamy, light summer wraps that combine fresh ingredients with Middle Eastern spice and acidity. Wash the lettuce, tear it into small pieces, and place it in a bowl with the diced tomatoes. Roughly chop the onion. Dice the cheese into coin-sized pieces. Remove the lemon flesh and roughly chop the zest. Heat oil in a shallow pan and add a dollop of harissa. Add the onions and fry for a few minutes. Now add the cheese and fry on all sides; it should develop a nice, golden crust. Transfer the mixture to a bowl. Don’t clean the pan, but add a little oil, crack the eggs into it, and cook them over easy (cooked on both sides). Divide the eggs and set aside. At the table, spread the wraps with hummus, which can be enriched with a little grated ginger. Layer the lettuce, tomatoes, the onion and cheese mixture, and the egg on top. Sprinkle with a little lemon zest, roll up the wraps, and enjoy.
