Ingredients for 8 servings:
- 500 g potatoes
- 1 large zucchini, diced
- 500 g minced meat of your choice
- 1 pack of tomatoes, pureed
- 2 bell peppers, red, chopped
- 1 small can of tomato paste
- olive oil
- Salt
- pepper
- Paprika powder
- Herbs of Provence
- 1 cube of stock, crushed
Instructions

can be easily modified or frozen
Brown the minced meat in a little olive oil until crumbly. Add the passata, tomato paste, and seasonings along with the stock cube. Peel the potatoes and cut them into bite-sized cubes. Add them and let them cook. Then add the diced bell pepper and finally the diced zucchini. Season to taste. Simmer until the potatoes are tender. Tip: If you like, stir in a dollop of sour cream.
