Ingredients for 2 servings:
- 250 g minced meat
- olive oil
- salt and pepper
- 250 g potatoes
- 400 ml vegetable stock
- 50 g tomato paste
- 1 bell pepper(s)
- 1 tsp mixed herbs
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Stew with tomatoes, peppers, potatoes and minced meat
Brown the minced meat in olive oil, season with salt and pepper. Add the peeled, diced potatoes and cook with the lid on for 5 minutes. Then add the vegetable stock, bring to a boil, and simmer for another 5 minutes. Then add the tomato paste and crushed bell pepper. Simmer for about 20 minutes over medium heat, add the mixed herbs, season to taste, and serve.
