Apple-thyme-bacon pancakes

Ingredients for 4 servings:

  • 4 eggs
  • 240 g flour
  • 220 ml milk
  • salt and pepper
  • 2 large apples, approx. 250 g each
  • 8 sprigs of thyme
  • 120 g bacon, diced
  • Clarified butter for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Whisk together the eggs and flour, gradually stirring in the milk. Season with salt and pepper. Pick the thyme leaves and add them. Quarter, core, and slice the apples. Divide the bacon and apples into 8 portions. Fry 1 portion of the bacon in a pan over medium heat. Add 1 portion of the apples and a little butter and fry briefly. Then pour a little batter over the top and fry until golden, turning once. The pancakes shouldn’t be too big, otherwise they’ll be difficult to flip. Tip: Pancakes can be kept warm in the oven at 80 degrees Celsius.
