Omelette with minced meat filling

Ingredients for 4 servings:

  • 4 eggs
  • 200 g flour
  • ½ liter of milk
  • 1 pinch(s) of baking powder
  • 1 pinch of salt, for the dough
  • 500 g minced beef
  • 1 clove(s) garlic, chopped
  • 3 spring onions, finely chopped
  • chives
  • Paprika powder, sweet
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the batter ingredients together. It’s best to mix the flour with the baking powder first, before adding the eggs, spices, and milk. I always add a splash of mineral water to help the batter swell nicely. Let it rest for about 10 minutes, then pour the batter into the pan in 4 portions and fry until golden brown. To flip, I place the pancake’s glass lid on top and tip it over, then let the bottom of the pancake slide back into the pan. Minced meat: Mix everything together, then cook about 4 palm-sized “flatcakes” in the pan. I place the flatcakes on one side of the pancake and then fold it over. I serve with: salad
