Ingredients for 4 servings:

  • 8 eggs
  • 200 g flour
  • 100 g sugar
  • 250 ml milk
  • Lemon zest from half a fruit
  • 1 tsp, leveled baking powder
  • ½ packet of vanilla sugar
  • 4 apples, crumbly (e.g. Boskoop)
  • Butter for frying
  • possibly powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Carefully separate the eggs, whisk the egg yolks with the next 6 ingredients. Beat the egg whites until stiff and carefully fold in. Peel and slice the apples. Melt the butter in a pan, add the apple slices in batches, and let them brown briefly. Scoop the batter into portions, pour it onto the apples, and fry until golden brown. If desired, dust the pancakes with powdered sugar.
