Ingredients for 4 servings:
- 75 g flour
- 125 ml buttermilk
- 2 eggs
- 1 pinch of salt
- ½ tsp baking powder
- 1 tbsp butter
- 100 g corn from the can
- some oil
- 200 g crème fraîche
- 2 tbsp dill, finely chopped
- 2 tbsp chives, finely chopped
- salt and pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes
For the blini, combine the sifted flour with the buttermilk and let it sit in the refrigerator for a few hours. Then, whisk in the eggs, salt, baking powder, and butter. Finally, add the corn and mix. The blini can now be fried in oil in a heated pan, placing small mounds of the mixture in the pan. For the dip, combine the crème fraîche with the herbs, salt, and pepper. Radishes or a green salad go well with this.
