Ingredients for 2 servings:
- 500 g potatoes, preferably floury
- 2 gherkins
- 1 onion(s), 2 if desired
- n. B. Oil
- n. B. cucumber juice
- possibly vinegar
- salt and pepper
- 1 egg(s), hard-boiled, optional
- some herbs, dried
Instructions
Working time approx. 20 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 25 minutes; Total time approx. 4 hours 45 minutes
a light potato salad, a nice side dish that does not dominate too much
Wash the potatoes and cook for about 20-25 minutes until tender. Drain and let cool. Peel the cold potatoes and dice very finely. Finely dice the gherkins and onion, and mix everything together. Combine the gherkin juice (amount as desired) with oil, a little vinegar if desired, salt, and pepper. Pour over the potato salad, mix well, and let stand for a few hours (at least 4). If desired, add a diced, hard-boiled egg. Sprinkle with dried herbs before serving.
