Ingredients for 10 servings:
- 1 kg tortellini, of your choice
- ½ cucumber(s)
- 1 can vegetables (Mexican mix)
- 1 tomato(s)
- 1 nectarine(s)
- 1 bell pepper(s)
- 2 sausages, Vienna sausages
- 400 g low-fat curd cheese
- ½ bottle of mayonnaise
- 3 tbsp cucumber juice
- Salt
- Pepper, white
- Garlic salt
- 1 shot of milk
Instructions

Cook the tortellini in vegetable broth according to the package instructions and skim off the water. Then let it cool slightly. Dice the cucumber. Peel and dice the bell pepper. Wash and dice the tomato and nectarine. Cut the sausages into small pieces. Place all ingredients in a large bowl along with the drained vegetable mixture. Add the tortellini and mix everything together. Mix the quark with the milk until smooth. Add the mayonnaise and mix. Season to taste with salt, pepper, garlic salt, and cucumber juice. Add the dressing to the salad and mix everything together. Refrigerate until ready to serve. Tastes great with grilled meat. But it’s also delicious as a main course on its own.
