Macaroni salad

Ingredients for 4 servings:

  • 250 g pasta (macaroni)
  • 160 g cornichon(s), (drained weight)
  • 125 g ham, cooked
  • 100g salami
  • 125 g cheese, Emmental
  • 100 g tomatoes, chopped
  • 1 large apple, sour
  • 5 tbsp ketchup
  • 1 tbsp red wine vinegar
  • 3 tbsp oil
  • 1 pinch(s) of sugar
  • 1 bunch of chives
  • 1 bunch of parsley
  • e.g. salt and pepper

Break the macaroni into 2-3 pieces and cook according to the package instructions until al dente, then transfer to a bowl. Cut the gherkins, salami, ham, and cheese into strips (not too finely!) and add to the pasta. Peel and core the apple, cut into strips, and add to the pasta along with the tomatoes. For the sauce, mix the ketchup with the vinegar and whisk in the cooking oil. Season with salt, pepper, and sugar. Finely chop the chives and parsley and fold into the sauce. Then add the sauce to the pasta and mix everything thoroughly. Let the salad sit in a cool place for at least 1-2 hours and season again with salt and pepper before serving.
