Salsify – Pineapple Salad

Ingredients for 4 servings:

  • 500 g salsify, fresh
  • lemon juice
  • 250 g pineapple, cut into small pieces
  • 1 medium-sized onion(s), finely chopped
  • 4 medium-sized eggs, boiled, cut into small pieces
  • 1 pack of herbs (6 herb mixture frozen 50g)
  • 1 cup of crème fraîche, 200 g
  • salt and pepper

Instructions

Working time approx. 1 hour; Rest time approx. 12 hours; Total time approx. 13 hours

Peel the salsify and place it in water splashed with lemon juice. Cut into small pieces (approx. 1 cm). Cook in lemon water with salt for approx. 4 minutes. Then let it cool in the cooking water. Combine the salsify and the other ingredients and season to taste. Let it sit in the refrigerator for 1 day. Bring to room temperature before serving.
