Passion fruit and coconut strips

Ingredients for 4 servings:

  • 400 g turkey breast fillet(s) or strips
  • 3 bags of rice
  • 1 can peach(s)
  • 400 ml passion fruit juice
  • 1 can coconut milk
  • 50 g desiccated coconut
  • 1 large onion(s)
  • some oil
  • some sauce thickener
  • 1 tbsp vegetable broth
  • 1 tsp curry powder
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Exotic and easy to prepare

First, peel and finely chop the onions, then drain and slice the peaches. If you bought turkey breast fillets, cut them into strips. Heat a little oil in a pan and brown the turkey. While the meat is cooking, you can put the rice on. Just before the meat is cooked, add the desiccated coconut and season with salt, pepper, and curry. Once the meat is done, remove it from the pan and keep warm, e.g., in the microwave. Fill the pan with a little oil again. Sauté the onions until translucent. Then add the coconut milk and passion fruit juice. Season the sauce with vegetable stock, curry, salt, and pepper, and thicken slightly with a sauce thickener. Finally, add the peaches and meat to the sauce and spread evenly.
