Grilled cheese with zucchini, tomatoes and onions

Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 1 m.-sized onion(s)
  • 2 tomatoes
  • 1 tbsp olive oil
  • salt and pepper
  • possibly chili powder
  • 1 cheese (grilled cheese)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Slice the onion, zucchini, and tomatoes. Heat a pan, add the oil, add the grilled cheese and vegetables, and season to taste. Fry everything over medium heat for about 10-15 minutes. A light and delicious dish for two people on hot summer days.
