- 250 g zucchini
- 50 g smoked tofu
- 80 g feta cheese
- 1 small onion(s)
- 1 tbsp olive oil
- salt and pepper

Cut the zucchini into thin strips using a vegetable peeler or spiralizer. Place in a colander or sieve. Sprinkle with salt and mix well to distribute the salt evenly. Finely dice the onion and smoked tofu and fry in a pan with a little olive oil. Squeeze the zucchini dry and fry in the pan for about two minutes. Add some pepper and herbs or spices of your choice. Remove the pan from the heat and add the diced feta cheese. For a vegan version, the feta cheese can be omitted or replaced with a vegan alternative. Approx. 475 kcal per serving.
