Briefly immerse the fresh peaches in hot water, rinse with cold water, and peel off the skin. Then halve, pit, and dice them. (Drain the peach halves from the can and cut into cubes.) Halve the vanilla pod lengthwise and carefully scrape out the seeds with the tip of a knife. Using a hand blender, purée the milk with the peach pieces, vanilla seeds, vanilla sugar, and oat flakes. Ladle the milk into tall glasses and garnish with torn mint leaves. You can also make the milk with nectarines or apricots.
