Ingredients for 8 servings:

  • 250 g soy shreds, dry (from the health food store)
  • 400 g onion(s)
  • 4 tbsp tomato paste
  • 300 ml yogurt 1.5% fat
  • 4 tbsp sour cream
  • 500g spaghetti
  • 12 tbsp cheese, grated, light
  • 3 tbsp paprika powder, sweet
  • pepper
  • ½ liter broth for cooking
  • 600 ml broth for soaking the soy strips

Vegetarian and low-fat

This recipe is actually for four people and two days, as it tastes even better the next day when it’s properly marinated. The day before, soak the soy strips in 600 ml of cold broth. The next day, dice the onions and sauté them in a pot with a little water over high heat. When the water has evaporated and the onions are starting to brown, add the soaked soy strips. Let it simmer until the broth has almost evaporated. Then stir in the tomato paste, paprika, and pepper and sauté for a little while longer. When the mixture is about to stick to the bottom of the pot, quickly add the yogurt, sour cream, and broth (if you don’t like salty food, you should replace some of the broth with water, as the broth in the soy strips already provides enough salt in the dish). Break the spaghetti into small pieces and add them to the pot. Once everything has boiled, reduce the heat. Now the stew needs to simmer for about 15-20 minutes, stirring occasionally. When the liquid has almost evaporated and the stew has a creamy consistency, add the cheese. Stir everything together and serve. According to WW, this recipe scores 6 points per serving.
