Ingredients for 1 servings:
- 4 eggs
- 1 pinch of salt
- 4 tbsp water, lukewarm
- 120 g honey, or maple syrup or sugar, adjust the amount according to your taste
- 1 vanilla pod(s), including the pulp, alternatively vanilla sugar
- 1 tsp, heaped cream of tartar baking powder
- 170 g spelt, freshly ground, or wheat (wholemeal)

Separate the eggs. Beat the egg whites with salt until stiff peaks form. Beat the egg yolks with the water and honey until fluffy, i.e. until the mixture is light in colour. Add the vanilla and carefully stir in the ground cereal mixed with baking powder. Finally, fold in the beaten egg whites. This is best done in 2-3 batches. Bake the dough on a baking tray lined with baking paper on the middle rack for approx. 15 minutes at 180-200°C. It must not get too dark, otherwise it will be too hard and difficult to roll. Turn the finished dough out onto a clean kitchen towel, carefully peel off the paper from one corner and immediately roll up from the wide side using the kitchen towel. Once cooled, unfold again and fill as desired.
