Ingredients for 2 servings:
- 2 bell peppers
- 1 zucchini
- 1 can/n tomatoes
- 1 onion(s)
- 1 bay leaf
- salt and pepper
- Oregano, basil, thyme
- 1 tsp oil
- Spice mix, Italian
- Tomato paste
- possibly sweet cream
- Garlic
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cut the vegetables into large pieces and place them in a pot of 1cm water. Mix in all the spices and oil, and simmer for about 5 minutes. Then add the can of tomatoes and simmer for another 5 minutes. Finally, thicken with tomato paste and finish with a little sweet cream, if desired. Serve with rice or whole-grain rice.
