Tomato – Mango – Salad

Ingredients for 2 servings:

  • 1 beef tomato(s), depending on size also 2
  • 1 mango(s), not too hard
  • 2 spring onions
  • 3 tbsp olive oil
  • 1 tsp ginger, freshly grated
  • 2 tbsp vinegar (orange or mango vinegar)
  • 1 tbsp orange juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the tomatoes, trim the spring onions, and halve them lengthwise. Then cut them into small pieces. Mix both, but reserve about 1/3 of the onions for the sauce. For the sauce, peel and grate the ginger. Then mix the ginger with the oil, vinegar, and spring onions. Season with orange juice, salt, and pepper. Let it stand for about 10 minutes. Then mix the tomatoes and sauce. Peel the mango and cut it into thin slices, removing the pit. Arrange the mango slices on a plate and place the tomatoes on top.
