Lentil curry with bananas and feta cheese

Ingredients for 4 servings:

  • 2 onions
  • 2 stalk(s) Celery
  • 2 tbsp oil
  • 1 apple
  • 2 garlic cloves, chopped
  • 2 tbsp curry powder
  • 100 g lentils, red
  • 250 ml vegetable stock
  • 1 tsp coriander, ground
  • 4 tbsp sour cream
  • 1 tbsp clarified butter
  • 2 bananas
  • 100 g sheep’s cheese
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and slice the apple, slice the onion and celery into thin rings, and fry everything in hot oil for about 3-5 minutes. Add the garlic and curry, and stir well. Add the lentils and broth and simmer over low heat for about 10-15 minutes, until the liquid has been absorbed by the lentils. Season with salt and coriander and stir in the sour cream. Heat the clarified butter in a pan. Peel the bananas, halve them crosswise, and then quarter them. Dice the feta cheese. Briefly fry both in the hot clarified butter. Arrange on top of the lentils and stir in some of the broth.
