Spinach and Feta Muffins

Ingredients for 12 servings:

  • 150 g spinach, frozen (finely chopped)
  • 200 g feta cheese
  • 250 g flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 80 ml olive oil
  • 300 g buttermilk
  • some fat for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Thaw the spinach. Cut the feta into small pieces. Preheat the oven to 180°C (160°C fan-assisted). Mix the flour with baking powder and salt. Whisk the eggs with oil, buttermilk, and spinach, and quickly stir in the flour mixture. Finally, fold in the feta cubes. Pour the finished batter into the muffin tin and bake for 15-20 minutes. Let it rest in the tin for about 5 minutes, then serve warm.
