Ingredients for 1 servings:

  • 60 g vanilla-flavored protein powder
  • some flavoring, optional, depending on the protein powder flavor
  • 180 g oat flakes
  • 1 tsp baking powder
  • 70 g almond(s), chopped
  • 320 g low-fat curd cheese
  • 3 eggs
  • n. B. Liquid sweetener, preferably Stevia, as it is healthier than regular sugar
  • e.g. blueberries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Fitness breakfast cookies with almonds and blueberries, makes 20 cookies

Mix all ingredients, except for the almonds and berries, with a mixer until you have a smooth batter. The batter is ready when it’s sticky. Fold in the almonds. Add sweetener if desired. Drop portions of the batter onto a baking sheet lined with baking paper. This amount makes about 9-10 cookies. Press blueberries into the cookies, if desired, and then use a spoon to shape and flatten the cookies. Bake in a preheated oven on the middle rack at 180°C for about 20-25 minutes. The baking time can vary depending on the oven’s power and the desired degree of browning. Tip: Instead of blueberries, you can also add a mashed banana and 1 teaspoon of cinnamon to the batter. If you’re making 20 cookies, 1 cookie has about 90 kcal.
