Ingredients for 6 servings:

  • 175 g sugar
  • 3 eggs
  • 1 lemon(s), zest
  • 225 g flour
  • ½ tsp baking powder
  • 750 g fruit of your choice

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes

Whisk the sugar, eggs, and lemon zest until frothy. Sift the flour and baking powder and stir in. Spread onto a prepared baking sheet and arrange any fruit on top. Bake at 160 degrees Celsius (320 degrees Fahrenheit) for about 45 minutes.
