Tempeh Reuben Sandwich

Ingredients for 4 servings:

  • 400 g sauerkraut
  • 200g tempeh
  • 4 rolls (toast rolls)
  • 1 avocado(s)
  • 2 tbsp mayonnaise, vegan
  • 1 tbsp ketchup
  • 2 tsp Sriracha sauce
  • 1 tsp Worcestershire sauce, vegan
  • 1 tsp horseradish
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • ½ tsp liquid smoke
  • ½ tsp garlic powder
  • ½ tsp pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cut the tempeh into 4 equal slices. Fry the slices in a pan over medium heat on both sides. Meanwhile, combine the sauce ingredients and toast the buns. Spread the sauce on the buns. Slice the avocado. When the tempeh is browned, pour the marinade over it and continue frying briefly, turning occasionally, until the marinade has evaporated and the tempeh is glazed. Top the buns with tempeh, sauerkraut, and avocado. Season the avocado with salt and pepper and place another bun on top.
