Ingredients for 4 servings:

  • 500 g bell pepper(s), mixed (green, yellow, red)
  • 1 jar bamboo shoot(s), 180 g drained weight
  • 100 g corn
  • 200 ml coconut milk
  • salt and pepper
  • curry powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

vegan, easy, quick

Chop the bell peppers and fry briefly in a pan. Then add the bamboo shoots. Fry together for another two minutes. Add the corn to the pan and pour in the coconut milk. Season to taste and simmer for another three to four minutes.
