Spinach – Feta – Lasagna

Ingredients for 2 servings:

  • 9 lasagna sheets
  • 1 onion(s), chopped
  • 1 can/n tomatoes
  • vegetable broth
  • 350 g spinach, frozen, (young spinach), thawed and drained
  • salt and pepper
  • 1 point feta cheese
  • 1 cup sour cream
  • 100 g cheese (Emmental)
  • Sugar
  • Cayenne pepper
  • basil
  • oregano
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Make the tomato sauce: Sauté the onion in a little oil, add the canned tomatoes, bring to a boil with the seasoning, and simmer until slightly thickened. Puree if desired. Season the spinach. Layer the onion in the following order in the casserole dish: tomato sauce on the bottom, then alternate lasagna sheets, spinach, sour cream, and feta (twice). Finally, add the lasagna sheets, tomato sauce, and Emmental cheese. Bake in a preheated electric oven at 200°C for about 30 minutes.
