Apple cream soup with curry

Ingredients for 4 servings:

  • 4 apples
  • 2 onions
  • 2 cloves garlic
  • 2 tbsp butter
  • 4 tbsp curry powder
  • 800 ml vegetable stock
  • salt and pepper
  • Clove powder
  • lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

delicious, light soup

Peel, core, and slice the apples. Peel and dice the onion and garlic. Heat the butter and sauté the onion, garlic, and apples. Sprinkle the curry powder over the apples and sauté briefly. Pour in the vegetable stock and bring to a boil. Simmer over low heat for about 15 minutes, stirring occasionally, until the apples have broken down. Then puree and season with clove powder and lemon juice. Serve hot. Tip: Garnish with apple slices or a nice piece of apple peel.
