Semolina and quark casserole with fruit

Ingredients for 4 servings:

  • 2 eggs
  • 1 pinch of salt
  • 50 g butter, soft
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 500 g quark
  • 60 g semolina
  • 1 tsp baking powder
  • 750 g seasonal fruit of your choice
  • 100 g almond flakes
  • some butter
  • possibly cinnamon

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes

Separate the eggs and beat the egg whites with a pinch of salt until stiff. Add the softened butter, sugar, vanilla sugar, and quark to the egg yolks. Mix the baking powder with the semolina, add, and mix everything well. Now carefully fold in the beaten egg whites. Wash the chosen fruit and, if necessary, pit, peel, and cut into pieces. Pour one-third of the batter into a greased baking dish. Spread the fruit on this layer of batter (if the fruit is very sour, sprinkle with a little more sugar), then add the rest of the batter to the fruit. Sprinkle the flaked almonds and butter flakes on top. Bake the casserole in a preheated oven at 175 degrees Celsius (350 degrees Fahrenheit) for one hour. The casserole tastes great both hot and cold. Tip: If you like, add a little cinnamon to the batter or to the fruit.
