Potato and carrot stew

Ingredients for 4 servings:

  • 500 g potatoes
  • 500 g carrot(s)
  • 2 stalk(s) leeks
  • 1 onion(s)
  • ¼ liter vegetable broth
  • ½ tsp thyme
  • 1 tsp parsley
  • Salt
  • pepper
  • Sugar
  • butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Silver and gold

Peel the potatoes and dice them. Slice the carrots. Slice the leeks. Dice the onion. Sauté the vegetables in melted butter for 5 minutes. Then pour in the broth, season with thyme, salt, pepper, and sugar, and bring to a boil. Then simmer for about 20 minutes. Finally, sprinkle the parsley over the stew. If you prefer a meatless dish, you can optionally add 250g of diced ham and let it simmer.
