Ingredients for 1 servings:
- 2 m.-sized potatoes, or more
- ½ carrot(s)
- 3 broccoli florets with stem and leaves
- 2 handfuls of wild garlic, fresh, young
- 1 handful of nettles, fresh young leaves
- ½ handful of ground elder, young leaves
- 1 large onion(s)
- 1 bunch of chives
- salt and pepper
- 1 shot of rapeseed oil
- 1 slice(s) of toast (wholemeal toast), if you like
- 1 shot of condensed milk or sweet cream
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
for spring cure or diet change – with broccoli, wild garlic, nettle, ground elder, etc.
Chop the onion and carrot and sauté lightly in oil. Cook the broccoli and peeled potatoes until soft. Use vegetable stock or make a broth mix with water. Then add the onion and carrot to the soup. Season with salt and pepper and continue cooking. When the potatoes and broccoli are tender, chop everything with a hand blender and add the fresh wild herbs, which have been washed and spun dry, and puree. Reserve a few herbs for garnish. Finally, add a small splash of condensed milk or milk. If you prefer it richer, use cream or sour cream. If you like, you can also toast the bread and add it to the soup. Add chives to the soup and around the edge as a garnish. Enjoy your meal and wish you success with your fasting and weight loss!
